Reminds me of that meme. “Wanna eat a dozen hardboiled eggs?” “No” “What if we cut them in half, mix the yolks with mayo and paprika and put them back in?” “You son of a bitch, I’m in”

I think I just had a foodgasm looking at those things. My family always had to make twice the usual deviled eggs because I’d eat nothing but them and King’s Hawaiian rolls.

Deviled eggs are honestly amazing even if I still have trauma from having to make about five dozen every week in culinary school.

My mom made them with sweet pickle relish and Miracle Whip. Same way she made tuna for sandwiches, egg salad, and macaroni salad. That’s how these should be made, and how I make them, but not everyone has agreed over the years.

my wife says if I don’t like hard boiled eggs, and I don’t like deviled eggs. I won’t like a pickled egg. My thought was the pickling might make a stronger flavor.

I felt like trying pickled eggs one day for the heck of it. I can eat hard boiled or deviled eggs, but I’m not the biggest fan of cold egg texture.

Made some pickled eggs, and the firmer texture, seasonings, and the zest from the vinegar give me enough other sensations/stimulations that the cold egg is really no longer on my mind, and I’d put pickled eggs far above hard boiled or deviled.

Here’s the recipe I use if you’re interested.

thanks. yeah its not like I can’t eat hard boiled or deviled. Its more I don’t care for hard boiled and I just don’t like the creamy with the egg white of deviled. Honestly its kinda mostly the bland eggwhite being to weak and the yolk sorta being to strong. I was thinking the pickled would permeate it all and maybe be something more my style. Definately going to try one but will likely do one that is supposed to be proper before trying to make my own.

The white will absolutely get the flavoring of your brine solution, and the white and yolk both get to a nice firmness from the osmosis. The white and yolk still have distinct consistency, but I feel the textures are more nicely balanced. I vacuum seal my jars to try and get deeper penetration, but it still doesn’t make it through the whole egg, it’s more like the smoke ring on smoked meats.

It can’t hurt to try one, and you can probably get a single egg from a deli or salad bar so it’s not like you need to be stuck with a hole pile of them. Usually the ones I see are the ones with beat juice, which I’m also eh about, hence why I just tried making my own from that guy’s recipe. Garlic and pepper flake sounded better to me. Wifey gets packs of the red eggs from the store and is just as happy with those.

oh I really appreciated the nuance. extra firmness is a plus to me and since its the white that is bland it having flavor alone I think would balance it out better. I generally only eat eggs scrambled and tend to like them dry or just barely moist. Im hoping to do just what you said and get one at like a deli.

no promises. I don’t go out to shop a lot and not every place has them. then you have my poor memory. I will try though.

Definitely not true. Pickled eggs barely taste like eggs. You should try getting some pickled quail eggs. I especially like Cajun spiced ones.

There’s a butcher shop near me that sells some great jalapeno pickled quail eggs. Otherwise, online, I like 7 Farms.

Those look great! It’s too bad you ran out of paprika before you could finish garnishing though.

(I’d still eat at least 6)
