Looks like broccoli rabe (which is amazing on a roast pork sandwich).

It could be broccolini with the amount of stems, but I don’t see any florets at all, only leaves. Maybe a young kale or collard? Haha I can’t tell
I wonder if you could do this low carb with squash.
